Abstract: This handbook describes the types of foods vended along the streets in Ghana, highlighting the nature of possible hazards and their sources. It also provides control measures on the possible hazards based on the principle of HACCP (Hazard Analysis and Critical Control Points). These control measures are applied to critical points identified from preparation through distribution, and to the final consumer. The information presented on the possible hazards and their sources are based on three research and development projects carried out on the street food sector in Ghana over the last the five years through funding from the Department for International Development (DfID), under its Crop Post-Harvest Programme
